I make the same burrito when I have time! I usually add pico de gallo as well for a fresh touch. It’s so good and definitely my favourite breakfast.

Ingredients for cookies dough: 260g unsalted butter 140g brown sugar 60g white sugar 2 eggs 400g plain flour 24g matcha powder 8g baking powder 1. Melt butter. Microwave for 1 minute and 30 seconds (at 30 second intervals). 2. Add brown sugar and white sugar. Mix. 4. Add eggs. Mix. 6. Add flour, matcha powder, and baking powder. Mix. 8. Divide into 18 portions (about 55g each). 9. Wrap and refrigerate for 2 hours. 10. Bake 12 minutes 350°F. 11. Make small well in cookies using teaspoon once baked. Ingredients for ganache: 90g white chocolate 60g heavy cream 8g matcha powder 6g unsalted butter 1. Melt white chocolate, heavy cream, matcha powder, and butter. Microwave 30 seconds. 2. Mix and fill cookies. 3. Refrigerate overnight and enjoy!
